I really want to tell you about this dip but I also want to tell you about my new aztec orange and blue striped baking mats. OK we’ll start with the Health Black Bean Hummus. We’ve been on a hummus kick lately; testing all kinds of new flavors, like Cilantro Jalapeño Hummus and Spicy Avocado Hummus. Each time I make a new flavor, I think it’s the best. But then I make another flavor and then that’s my favorite. Now this Health Black Bean Hummus is now my new favorite. It’s made with black beans instead of chickpeas and I kept it a little bit chunky to keep the texture of the black beans. It’s crazy simple, just put everything in the food processor and it’s done. It keeps in the refrigerator for a week and we’ve been putting it on everything…tacos, quesadillas and on toast.
Now to this baking mat…I just love it! I originally saw it in a magazine put there was not a website to order it from. So I went to my trusted Amazon shopping site and I found it. I bought both the orange and the red and I use them for baking, of course, but I also use them for a serving mat because they are so darn cute. Healthy Black Bean Hummus uses black beans instead of chickpeas. A little spicy and filled with great southwest flavors.
Ingredients
- 29 oz. can of black beans
- 3 TBS tahini
- 1 TBS cumin
- 1 TBS red pepper flakes
- Juice from two small limes
- 1/4 extra virgin olive oil
- Salt and pepper to taste
- Cotija cheese for garnish
Instructions
- Rinse black beans with cool water.
- In a food processor, add beans, tahini, cumin, lime juice, salt and pepper.
- Pulse to mix ingredients.
- Drizzle in olive oil.
- Be sure to taste and add more lime juice, pepper flakes, salt or olive oil to your liking.
- Garnish with Cotija cheese.
