I do love a fast food breakfast sandwiches like everyone else, but I can make them healthier with ingredients that my family loves for a grab and go with no waiting in the drive up lane. I call this version Hawaiian because I make them with those sweet and soft Hawaiian rolls. I use the small Hawaiian rolls so there are two to a serving. And here’s another tip – you simply make one large sandwich and cut them into individual servings. I wrap them in foil, place them in the refrigerator – but be careful they go fast!
1 package small Hawaiian dinner rolls
6 slices of deli black forest ham
6 slices of cheddar cheese sliced thin
2 TBS butter
3 TBS apricot jam
1/3 cup half-n-half
Salt and pepper to taste
For the eggs:
Preheat oven to 350 degrees.
Spray a large baking dish with non-stick spray.
Mix eggs and half-n-half and pour into baking dish; add salt and pepper to taste.
Bake for approximately 15 minutes. Check frequently to ensure doneness.
While eggs are baking, slice the entire package of Hawaiian rolls at once.
Spread one side of the bread with apricot jam and one side with butter. Layer ham on one side of bread, cut egg to fit the entire bread slap and lay it on top of the ham. Finally place cheese slices on top of egg.
Place top of rolls all together on top. Following the precut sandwich lines, cut into individual sandwiches.
