Description
Grilled Pineapple With Coconut Rum Sauce is sweet and smokey. The sauce has a little kick with a shot of coconut rum. Serve it as a dessert, a side or part of the entre.

For the Coconut Rum Sauce:
- 1 can coconut cream
- 2 shots coconut rum
- Juice of 1 lime
- 3 TBS sweetened shredded coconut
For the Grilled Pineapple:
- 2 TBS of juice from the pineapple
- 1 TBS brown sugar
Instructions
For the Coconut Rum Sauce:
- In a bowl, combine all ingredients.
- Cover and chill in the refrigerator for 1-2 hours or overnight.
For the Grilled Pineapple:
- Combine the brown sugar and pineapple juice.
- Brush the pineapple with the brown sugar sauce.
- Grill until charred on all sides – about 15 minutes depending on the temperature of your grill.
