Description

Grilled Pineapple With Coconut Rum Sauce is sweet and smokey. The sauce has a little kick with a shot of coconut rum. Serve it as a dessert, a side or part of the entre. 


Ingredients

For the Coconut Rum Sauce:

  • 1 can coconut cream
  • 2 shots coconut rum
  • Juice of 1 lime
  • 3 TBS sweetened shredded coconut

For the Grilled Pineapple:

  • 2 TBS of juice from the pineapple
  • 1 TBS brown sugar

Instructions

For the Coconut Rum Sauce:

  1. In a bowl, combine all ingredients.
  2. Cover and chill in the refrigerator for 1-2 hours or overnight.

For the Grilled Pineapple:

  1. Combine the brown sugar and pineapple juice.
  2. Brush the pineapple with the brown sugar sauce.
  3. Grill until charred on all sides – about 15 minutes depending on the temperature of your grill.
