It’s springtime and that means it’s time to fire up the grill. If you’ve never grilled pineapple directly on a hot grill, you are missing out – and seriously – who wants to miss out? I don’t! Because I suffer from FOBLO – Fear of being left out – (insert chuckle). Now that I’ve got that off my chest, let’s talk about this juicy, sweet, smoky treat.
As you know, I’m all about good food that’s not hard to make and doesn’t take a lot of time. As a busy business person who loves food, I need to make sure I have time to enjoy every bite, but not spend hours in the kitchen – especially if I’m entertaining family and friends. Grilled Pineapple With Coconut Rum Sauce is another one of my recipes that you can prepare ahead of time and while you’re grilling the chicken or burgers, enjoying your company, you can literally throw these pineapple skewers right on the grill with everything else – it’s fine to eat them room temperature – in fact, I prefer them room temperature with the cool coconut rum sauce.
Pro Tip: If you are using wood skewers, make sure you soak them in a jar of water for about 5 minutes. That way they won’t burn on the grill. I use a tall glass filled with water and set them in the glass. After 5 minutes I flip them over so I am sure to soak the entire skewer. Use this soaking method any time you are using wooden skewers on a grill or grill top.

Ingredients
For the Coconut Rum Sauce:
- 1 can coconut cream
- 2 shots coconut rum
- Juice of 1 lime
- 3 TBS sweetened shredded coconut
For the Grilled Pineapple:
- 2 TBS of juice from the pineapple
- 1 TBS brown sugar
Instructions
For the Coconut Rum Sauce:
- In a bowl, combine all ingredients.
- Cover and chill in the refrigerator for 1-2 hours or overnight.
For the Grilled Pineapple:
- Combine the brown sugar and pineapple juice.
- Brush the pineapple with the brown sugar sauce.
- Grill until charred on all sides – about 15 minutes depending on the temperature of your grill.
- Prep Time: 15 minutes
- Cook Time: 15 minutes
