If you make one thing with fresh peaches this year, make my Grilled Peach Salad Dressing. I promise you won’t be sorry and it will become your new favorite dressing for salads, chicken, and even as a drizzle on yogurt. We love this dressing on a spinach salad with chicken, fruit, nuts, and cheese.
Can you believe I never liked peaches as a kid? I know – that’s crazy – right!? I think it was the fuzzy skin that just didn’t sit right with me. But I’m happy to say that as an adult, I absolutely love fresh peaches. You know the ones…perfectly ripened, one bite and you get that sweet, mellow, lovely taste and juice dripping down your hand. I can’t believe I missed out on all that as a kid, but I’m sure making up for lost time now!
How to choose a ripe peach to grill:
The absolute best way to choose a ripe peach for grilling or eating is to use your nose. Just hold the peach up to your nose and take a big sniff. Trust me, when you smell a perfectly ripe peach, you will know it…perfect sweetness. Once you do the smell test, gently squeeze the peach. It should have a little firmness but not hard. If it’s too soft, it’s overripe…put that one down and try another one. If you are going to grill the peaches, look for a bite more firm peach…firm but not hard.
How to grill a peach:
- Slice the peach in half.
- Remove and discard the pit.
- Brush both sides lightly with extra virgin olive oil.
- Place flesh-side down on a heated grill.
- Grill on medium heat for 3-5 minutes.
- Cool and slice.
Refrigerate or not?
Peaches are a lot like an avocado…they will ripen in a bag. So if you choose peaches that are not quite ripe, put them in a paper bag and place them on the counter for a day or two. If you buy perfectly ripe peaches, use them within a day or a day and a half so they don’t continue to ripe and become overripe and mushy. If you want to stop them from ripening, but them in the refrigerator for up to 4-5 days.
