Some times a lighter dinner is just perfect after a long day and this salad is great for dinner, breakfast and even lunch. Top it with the egg and you have a meal!
Romaine lettuce (we like baby romaine)
10-15 cherry tomatoes – sliced in half
1/2 cucumber – diced
10 kalamata olives – diced
1/3 cup red wine vinegar
1/3 cup extra virgin olive oil
2 TBS Dijon mustard
1 teaspoon honey
1 TBS dried oregano
salt and pepper to taste
2 eggs – cooked over easy
For dressing: mix olive oil, vinegar, oregano, mustard, honey, salt and pepper – set aside.
For salad: Assemble lettuce, olives, tomatoes and cucumber in salad dishes and toss with dressing. Top with cooked egg.
