  • 1 pint green beans
  • ¼ cup shelled pistachio nuts
  • ¼ crumbled feta cheese
  • 15 cherry tomatoes
  • 1/3 cup seeded kalamata olives

Let’s Make Greek Green Bean Salad

Dressing

  1. Mix all ingredients and set aside.

Salad

  1. Prepare a large bowl filled with ice and water. Set aside.
  2. Boil 4 cups of water.
  3. Slice the green beans in thirds.
  4. Slice the olives in half.
  5. Slice the tomatoes in half or quarters.
  6. Blanch green beans in boiling water for 4 minutes.
  7. Spoon out green beans and immediately place them in the ice water bath. Allow the beans to cool in the water.
  8. Pat the beans dry on a paper towel.
  9. Transfer beans, olives, tomatoes, feta, and pistachios to a bowl.
  10. Drizzle in salad dressing and toss.
