- 8 oz. block feta cheese
- 6-7 Roma tomatoes
- 1 English cucumber

- 2 tbsp extra virgin olive oil
- 2-1/2 tbsp Red wine vinegar
- 1 tbsp Dijon mustard
- 1 tbsp capers (drained)
- 1/2 teaspoon salt
- 1/2 teaspoon pepper

- Slice tomatoes into quarters.
- Cut cucumber in half lengthwise and then slice.
