Bright, refreshing, and packed with Mediterranean flavors, this Greek Feta Salad is the perfect combination of crisp veggies, tangy feta, and a zesty dressing that will transport your taste buds straight to the sun-soaked shores of Greece.

Simple & Nourishing: With minimal ingredients and no cooking required, this salad is a quick, healthy, and satisfying option for any meal or side dish.

Ingredients

  • 8 oz. block feta cheese
  • 6-7 Roma tomatoes
  • 1 English cucumber
  • 1 teaspoon oregano
  • 1/3 cup kalamata olives
  • 2 tbsp extra virgin olive oil
  • 2-1/2 tbsp Red wine vinegar
  • 1 tbsp Dijon mustard
  • 1 tbsp capers (drained)
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper

Let’s Make Greek Feta Salad

  1. Whisk olive oil, vinegar, mustard, salt, and pepper. Set dressing aside.
  2. Slice tomatoes into quarters.
  3. Cut cucumber in half lengthwise and then slice.
  4. Place cucumbers and tomatoes onto a serving dish.
  5. Add olives and drizzle with dressing (save 1 teaspoon of dressing).
  6. Pat feta cheese with a paper towel to dry and place it on top of the salad.
  7. Pour with the remaining 1 teaspoon of dressing and capers.

  • Use Fresh, High-Quality Ingredients: The freshness of your vegetables (like ripe tomatoes and crunchy cucumbers) makes a difference in this salad. Also buy the best feta you can find, preferably a block of authentic Greek feta rather than pre-crumbled varieties.
  • Make the Dressing from Scratch: While store-bought dressings can be convenient, nothing beats a quick homemade vinaigrette.
  • Add the Feta Last: To avoid breaking up the feta, add it at the very end and slice it when serving.
  • Customize Your Olives: Greek salads traditionally use Kalamata olives, but you can mix in green olives for a different taste. Just make sure to remove any pits.
  • Consider a Protein Boost: If you want to turn this into a more filling meal, you can top the salad with grilled chicken, lamb, or even some chickpeas for a vegetarian option.
