Ingredients
Chicken Marinade
- 2 large chicken breasts
- Zest and juice from 1 large lemon
- ¼ cup extra virgin olive oil
- 1 tbsp Greek seasoning mix

- 1 teaspoon paprika
- ½ teaspoon sea salt
- ½ teaspoon cracked black pepper

- ½ cup cherry tomatoes
- ½ English cucumber
- Drizzle of extra virgin olive oil
- Drizzle of red wine vinegar (can substitute with apple cider vinegar)
- ½ teaspoon oregano
- Pinch of salt
- Pepper

Let’s Make Greek Chicken with Feta Salad
Prep and Marinade Chicken
- Slice chicken breasts in half lengthwise so you have four pieces.
- Pound each slice thinly.
- Add all marinade ingredients to a large zip-top bag, close the bag, and mix with your hands until combined. Add pounded chicken, close the bag, and gently rub the chicken until all of it is covered. Refrigerate for 1 hour, but not more than 3 hours.
Feta Salad

Cook Chicken
- Heat a non-stick skillet on medium-high. Add 1 tbsp extra virgin olive oil.
- Remove the chicken and shake off all excess marinade. Discard the remaining marinade.
- Cook chicken until it has an internal temperature of 165° and golden brown on both sides. You may have to cook chicken in batches.
Assembly
