Ingredients

Chicken Marinade

  • 2 large chicken breasts
  • Zest and juice from 1 large lemon
  • ¼ cup extra virgin olive oil
  • 1 tbsp Greek seasoning mix
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • ½ teaspoon sea salt
  • ½ teaspoon cracked black pepper

Feta Salad

  • ½ cup cherry tomatoes
  • ½ English cucumber
  • Drizzle of extra virgin olive oil
  • Drizzle of red wine vinegar (can substitute with apple cider vinegar)
  • ½ teaspoon oregano
  • Pinch of salt
  • Pepper
  • 2 oz. crumbled feta cheese

Let’s Make Greek Chicken with Feta Salad

Prep and Marinade Chicken

  1. Slice chicken breasts in half lengthwise so you have four pieces.
  2. Pound each slice thinly.
  3. Add all marinade ingredients to a large zip-top bag, close the bag, and mix with your hands until combined. Add pounded chicken, close the bag, and gently rub the chicken until all of it is covered. Refrigerate for 1 hour, but not more than 3 hours.

Feta Salad

  1. Prep the salad in advance by dicing the vegetables and crumbling the feta cheese but do not combine. Right before serving, combine the vegetables and salad dressing, and then add the crumbled feta cheese. See Krazy Kitchen Mom Tips – Salad Preparation below.

Cook Chicken

  1. Heat a non-stick skillet on medium-high. Add 1 tbsp extra virgin olive oil.
  2. Remove the chicken and shake off all excess marinade. Discard the remaining marinade.
  3. Cook chicken until it has an internal temperature of 165° and golden brown on both sides. You may have to cook chicken in batches.

  1. Arrange the grilled Greek chicken on a serving platter and top it with a generous bed of vibrant feta salad.

  •  Cooke to Perfection – Achieve a golden-brown perfection by cooking the marinated chicken until it has an internal temperature of 165° and is a nice golden-brown color. This not only enhances the taste but also ensures the chicken remains tender and juicy.
  • Salad Preparation – Prep the salad in advance by dicing the vegetables and crumbling the feta cheese. Right before serving, combine the vegetables and salad dressing, and then add the crumbled feta cheese. This preserves the crispness of the tomatoes and cucumber and prevents the feta from becoming overly moist, allowing each bite to showcase its distinct textures and flavors.
