Roulades make are an easy, impressive meal. These are great for portion control or for dinners for one or two. They go wonderful with tangy Tatzkiki Sauce.
2 chicken breasts
1/4 cup fresh baby spinach leaves
6 thin slices of feta cheese
2 TBS dried oregano
1 teaspoon extra virgin olive oil
Salt and pepper
Preheat oven to 350 degrees
Dry chicken with a paper towel.
Pound chicken breast thin with a kitchen mallet.
Salt and pepper one side.
Place a layer of spinach on one side and top with feta cheese. Sprinkle with 1/2 dried oregano.
Roll chicken and secure with a large tooth pick (I soak them in water for about 20 minutes so they do not burn in the oven).
Spray an oven rack with non-stick spray and place on a pan to catch drippings.
Bake chicken for 20-25 minutes until brown.
Remove from oven and let sit for 5 minutes. Slice and serve.
