For the love of goat cheese!
6 oz. plain goat cheese at room temperature
3 oz. cream cheese at room temperature
1/4 salted, shelled pistachios
Toast pistachios in skillet on stove top. Careful not to burn as they brown quickly.
Set aside toasted pistachios to cool.
Mix goat cheese and cream cheese; roll into balls and refrigerate for 10 minutes.
Remove balls from refrigerator and roll over pistachios coating the entire ball. Place back into refrigerator for 1 hour.
