Fruit Juice Layered Ice Cubes

I can hardly call this a recipe…it’s more like a brilliant idea. We love lazy weekends by the pool and we also love mimosa. But the problem with a mimosa by the pool is that they just don’t stay cold enough. That’s where I came up with the ice for Fruit Juice Layered Ice Cubes or Mimosa Ice Cubes as I really like to call them.

You just use your favorite flavored fruit juice, layered in an ice cube tray and now you don’t even need to add any additional juice to your weekend mimosa. The ice cubes do it all!

Description

Brighten up any cocktail, mocktail and even mimosas with Fruit Juice Layered Ice Cubes. So easy…just use your favorite fruit juice flavors.


Ingredients

  • Orange juice
  • Cranberry juice

Instructions

  1. Fill an ice cube tray 1/3 with orange juice.
  2. Freeze for 4-6 hours or until firm.
  3. Pour the cranberry juice into the tray another 1/3 of the way.
  4. Freeze for 4-6 hours or until firm.
  5. Pour another layer of the orange juice into the try to fill each cube.
  6. Freeze for 4-6 hours or until firm.

      Absolutely! I use these instead of adding the OJ. As they melt – you get a mimosa

A traditional Caprese Salad dressed up for spring A traditional Caprese Salad dressed up for spring and summer by adding ripe juicy strawberries. It’s perfect for any spring or summer gathering.

Ingredients 
* 1 pint fresh strawberries
* 1 pint cherry tomatoes
* 4 oz. mozzarella pearls
* 1/4 cup fresh basil strips
* 1 16 oz container baby spinach 
* 1 tbsp extra virgin olive oil
* 1 tbsp balsamic vinegar
* salt and pepper to taste
* additional whole basil leaves for garnish

Directions 
* Dice the tomatoes and strawberries into bite-sized pieces. 
* Cut the mozzarella pearls in half or in quarters depending upon the size. 
* Slice the basil into thin pieces.
* Place the strawberries, tomatoes, mozzarella, and basil into a small bowl. 
* Add balsamic vinegar, olive oil, salt, and pepper, and gently mix. 
* Refrigerate for 30 – 45 minutes. 
* Serve on a bed of baby spinach or lettuce of your choice
