This fresh spring salad filled with soft crispy butter lettuce, strawberries, beets, hard-boiled eggs, and goat cheese will brighten any salad lover’s day.

Five Reasons Why This Recipe Works

  5. You’ll love the creaminess of the goat cheese with the crispy and delicate butter lettuce, the earthiness of the beets, and the sweet strawberries.

Ingredients

  • Butter lettuce – you can also use Romaine lettuce or any type of leaf-lettuce. I do not recommend using iceberg lettuce for this salad.
  • Honey goat cheese – this is my go-to goat cheese. You can use any type of flavored or non-flavored goat cheese.
  • Yellow beets – I prefer yellow beets over red beets, if I have a choice. Yellow beets are a bit sweeter and a little less earthy.

Let’s Assemble the Fresh Spring Salad

  1. Lay butter lettuce leaves in a single layer on a large platter.
  2. Slice beets and arrange them in a row on top of the lettuce at the top of the platter.
  3. Slice strawberries and arrange them in a row at the bottom of the platter.
  4. Spread half of the alfalfa sprouts just above the beets and the other half below the strawberries.

  1. Cut the hard-boiled eggs in half, salt and pepper them and arrange them down the middle of the platter on top of the lettuce.
  2. Sprinkle small pieces of goat cheese all over the salad.
  3. Crush the macadamia nuts and sprinkle them on top of the platter.
  4. Garnish with fresh thyme leaves.

Strawberry Champagne Vinaigrette

My Strawberry Champagne Vinaigrette goes fantastic on this salad. Drizzle the vinaigrette all over the top of the salad before serving or serve it on the side for everyone to drizzle themselves.

Ingredients 

  • 1 head butter lettuce – cleaned

  • 10 crushed macadamia nuts
  • 3 hard-boiled eggs
  • 6 fresh thyme sprigs
  • alfalfa sprouts
  • 4 oz. goat cheese
