1 lb. lean ground beef
1 envelop taco seasoning
1 jalapeno – diced
1 can green chilies
1/2 bag frozen corn – thawed
1 can black beans – rinsed thoroughly
Small flour tortillas
1 bag shredded cheddar cheese
Shredded iceberg lettuce
10 diced cherry tomatoes
Preheat oven to 350 degrees
Brown ground beef; pour off any grease.
Add chilies and jalapenos. Mix in taco seasoning with water. Stir and simmer for 5 minutes on low.
Add corn and black beans and simmer for another 5-10 minutes.
Spray a pie dish or baking dish with nonstick cooking spray. Place a layer of the tortillas coving the bottom of the dish. Spoon a generous layer of the meat mixture and top with some of the cheddar. Repeat until dish is full. Add one last layer of the tortillas on the top of the layers and press down lightly. Top entire dish with cheddar cheese.
Cover with non-stick foil and bake for 30 minutes. Remove foil and bake for another 5-8 minutes. Let the dish cool for 10-15 minutes before serving.
To serve, top each piece with shredded lettuce and diced tomatoes. Enjoy!
