4 pieces of seeded rye bread
2 slices of sharp cheddar cheese
4 slices of tomato
1/4 English cucumber – sliced
1 handful alfalfa sprouts
juice from 1/2 lime
1 large avocado
1 TBS low-fat sour cream or plain yogurt
2 leaves of lettuce – I like Romaine leaves removed from the rib
salt and pepper
Cut avocado in half and remove the seed. With a spoon remove the inside avocado meat and place in a bowl. Add sour cream or yogurt, the lime juice and salt and pepper to taste. Mash all together.
Spread avocado mixture on two halves of the bread and layer other ingredients. This makes two sandwiches and is good for those “meatless Mondays”.
