Easy Greek Spinach Pie

Spinach Pie, also known as Spanakopita, is a savory Greek dish found in most Greek restaurants. I use refrigerated pie crust and frozen spinach to make Easy Greek Spinach Pie.

When I eat out at ethnic restaurants, I tend to have a few all-time favorite dishes and I stick to those most of the time. For Greek, Spanakopita or Spinach Pie is always at the top of my list. Now I also make it at home with my Easy Greek Spinach Pie recipe.

I’ve been on a hand-pie kick lately so I decided to make this a little hand-held spinach pie. They are perfect for school or work lunches or even a quick snack. My husband, Vince, likes to grab one (OK usually two) for breakfast on his way out the door in the morning.

Easy Greek Spinach Pie

I use traditional ingredients, puff pastry, spinach, onion, feta cheese and some Greek seasoning. My favorite Greek seasoning is Cavender’s All Purpose Greek Seasoning filled with a blend of seasonings that go perfectly with my Easy Greek Spinach Pie.

Description

Spinach Pie, also known as Spanakopita, is a savory Greek dish found in most Greek restaurants. I use refrigerated pie crust and frozen spinach to make Easy Greek Spinach Pie.


Ingredients

Scale
  • 2 boxes frozen spinach – thawed. Make sure to squeeze all the water out of it with a kitchen towel.
  • 1 medium onion – diced
  • 1 cup feta cheese – crumbled
  • 1 egg – beaten
  • 1/2 cup ricotta cheese
  • 3 TBS extra virgin olive oil
  • 1 TBS Cavender’s All Purpose Greek Seasoning
  • Two pie crust doughs

Instructions

  1. Preheat oven to 400 degrees
  2. Place oil in stove top skillet, add onions and cook for 4-5 minutes.
  3. Add spinach and cook 8-10 minutes on medium.
  4. Remove spinach mixture from heat and set aside to cool.
  5. While spinach and onions are cooling, roll out the pie crust dough
  6. Using a medium-sized circle cookie cutter or a large glass, cut the pie crust dough into circles.
  7. In a large bowl, add the spinach and onions, beaten egg, feta cheese and ricotta cheese.
  8. Place 1-2 TBS of the mixture on 1/2 side of the circle, fold the circle over and crimp to close.
  9. Brush with egg whites.
  10. Make two small slits on the top of each hand pie.
  11. Bake for 20-25 minutes.
