Chicken is always in my freezer, but frankly I get so tired of just another chicken dinner. This week, I decided I really wanted baked chicken and so I sprinkled some thighs with some salt, pepper and thyme and literally threw it in the oven. To my surprise was this! Flavor packed, crispy skin, baked chicken. We served it on top of a mashed sweet potato and this tasted like a weekend cooked meal. Definitely on my short list now! Enjoy!
