- 3 large eggs-room temperature
- ½ cup flour
- ½ cup milk-room temperature
- 1 teaspoon sugar
- Pinch of nutmeg
- Pinch of salt
- 1 teaspoon lemon zest
- 3 tbsp butter
Let’s Make Dutch Baby Pancakes
- Preheat oven to 400°.
- Combine eggs, flour, milk, sugar, nutmeg, salt, and lemon zest in a blender, scraping down the sides as needed so everything mixes. Allow the mixture to rest at room temperature for 10 minutes while you prepare the baking dish(es).
- Place 1 tbsp of butter into three baking dishes or ramekins or place all 3 tablespoons into a cast iron skillet.
- Place the dishes or skillets into the hot oven to melt.
- Remove the hot baking dish(es) and fill with the egg mixture. For 3 pancakes, divide the mixture equally between the 3 ramekins. For 1 pancake, add the egg mixture to the hot skillet.
- Bake for 20 minutes. Reduce heat to 325° and bake for another 5 minutes.
- Remove from oven, slice, add your favorite toppings, and serve.
