These juicy flavor-packed chicken thighs need to marinate overnight, you will need to get started in advance. They are great for a group since you do all of the preparation ahead of time.
8 chicken thighs – bone in/skin on
1/2 cup Dijon mustard
1/4 cup red wine vinegar
1/4 cup brown sugar
4 TBS extra virgin olive oil
1 TBS onion powder
1 garlic clove
1/2 teaspoon red pepper flakes
Salt and pepper
2 small or one large onion, cut into rings
Add all ingredients EXCEPT chicken thighs and sliced onion rings to blender and mix for 1-2 minutes.
Cut two large slices in the top of each chicken thigh.
Pour mixture into large zip top bag and add chicken thighs. Generously rub thighs through the bag to ensure they are all coated. Place in refrigerator overnight to marinate thoroughly.
When you are ready to bake, preheat oven to 450 degrees. Spray a large oven proof baking dish with non-stick cooking spray. Layer onion rings on bottom or pan and place chicken thighs on top of sliced onions.
Bake for 40-45 minutes. Enjoy!
