- 8 -10oz farfalle pasta
- 4 large hardboiled eggs cooled
- 4 slices of bacon cooked, cooled and crumbled
- 1/3 cup celery diced small
- 1/3 cup carrots peeled and diced small
- fresh chives for garnish
Dressing
- 1/2 cup mayonnaise
- 1/3 cup Sour cream
- 2 tsp apple cider vinegar
- 1 tsp Dijon mustard, or more to taste
- 1 tsp yellow mustard
- 1 tsp sugar
- 1/2 tsp sweet paprika
- salt to taste
- cracked black pepper to taste

Preparation
- Cook the pasta 1 minute less than the box instructions. Rinse under cool water and refrigerate or let it sit at room temperature to cool.
- Dice celery and carrots small.
- Cook bacon, cool, and crumble it into small pieces.
- Cook hardboiled eggs and allow them to cool. Once they are cool, using a box grater, (largest hole size) gently grate the eggs. Discard any large pieces that do not go through the grater holes.
Dressing
- Whisk all dressing ingredients and set aside. The dressing can also be prepared in advance if desired.
Assembly
- Place pasta, vegetables, bacon, and egg (save 2 tbsp. of bacon and egg for garnish).
- Top with dressing and gently fold until the dressing completely coats the mixture.
- Refrigerate or serve immediately.
