If you love deviled eggs, you will love this pasta salad. It’s the perfect side dish for all your gatherings.

It’s perfect for potlucks, picnics, family gatherings, or a make-ahead dish for busy weeknights.

Pasta Salad

  • 8 -10oz farfalle pasta
  • 4 large hardboiled eggs cooled
  • 4 slices of bacon cooked, cooled and crumbled
  • 1/3 cup celery diced small
  • 1/3 cup carrots peeled and diced small
  • fresh chives for garnish

Dressing

  • 1/2 cup mayonnaise
  • 1/3 cup Sour cream
  • 2 tsp apple cider vinegar
  • 1 tsp Dijon mustard, or more to taste
  • 1 tsp yellow mustard
  • 1 tsp sugar
  • 1/2 tsp sweet paprika
  • salt to taste
  • cracked black pepper to taste

Let’s Make Deviled Egg Pasta Salad

Preparation

  1. Cook the pasta 1 minute less than the box instructions. Rinse under cool water and refrigerate or let it sit at room temperature to cool.
  2. Dice celery and carrots small.
  3. Cook bacon, cool, and crumble it into small pieces.
  4. Cook hardboiled eggs and allow them to cool. Once they are cool, using a box grater, (largest hole size) gently grate the eggs. Discard any large pieces that do not go through the grater holes.

Dressing

  1. Whisk all dressing ingredients and set aside. The dressing can also be prepared in advance if desired.

Assembly

  1. Place pasta, vegetables, bacon, and egg (save 2 tbsp. of bacon and egg for garnish).
  2. Top with dressing and gently fold until the dressing completely coats the mixture.
  3. Refrigerate or serve immediately.

  • Chill the pasta before mixing: After cooking, rinse it under cold water to stop the cooking process and then chill it in the refrigerator. Chilled pasta will hold its shape better and prevent the salad from becoming too warm.
  • Adjust seasoning: Since deviled egg pasta salad typically includes ingredients like mustard, mayonnaise, and vinegar, adjust the seasoning gradually. Taste as you go and add more salt, pepper, or other seasonings as needed.
