Description

My Deli Salad Platter Recipe is a combination of three classic deli salads – homemade egg salad, chicken salad, and tuna salad.

Ingredients

Egg Salad

  • 6 hardboiled eggs – peeled and chopped
  • 1 celery stalk – chopped
  • 1/3 cup of mayonnaise – I use Helman’s brand
  • 1 TBS yellow mustard
  • 2 TBS sweet pickle relish
  • Salt and pepper to taste

Chicken Salad

  • 2 chicken breasts – cooked and chopped
  • 2 celery stalks – chopped
  • 1/2 cup slivered almonds
  • 1/2 cup red grapes – sliced
  • 1 cup mayonnaise
  • 1 teaspoon yellow mustard
  • 1 teaspoon white vinegar
  • Salt and pepper to taste

Tuna Salad

  • 3 2.6-ounce packages of tuna
  • 1 celery stalk – chopped
  • 1/2 cup mayonnaise
  •  2 TBS sweet pickle relish
  • 1/2 teaspoon black pepper

Instructions

Egg Salad, Chicken Salad, Tuna Salad

  1. Combine all ingredients.
  2. Chill in the refrigerator for 1 hour.

To Assemble Platter

  1. Line a plate with lettuce leaves.
  2. Using an ice cream scoop, scoop one helping of each salad onto the plate.
  3. Serve with crackers.
