Curry used to be one of my top five spices; I’d use it in everything. But I think I overwhelmed my family with so much curry that every time I even uttered the word I could see them cringing – not again. So I put them out of their misery for a few short year. Hello family – I’m back! And I’m happy that I made my Easy Curry Chicken Salad – oh, and the family is too.
The curry powder really gives this salad the little extra kick but I also find it to be a very warming spicy. I add to the creamy mayo, celery, grapes and sunflower seeds for extra crunch. You can serve Chicken Curry Salad as a salad or as a sandwich. Actually I like it both ways so that’s why I made it both ways.
I use Madras Curry Powder which, for some reason was hard to find. But no worries, I just ordered it on line. By the way “madras”curry is a curry blend the has many spices, including turmeric, cinnamon, garlic and chili pepper to name a few. It’s on the “hotter” side of regular curry powder.Print
Easy Curry Chicken Salad
A tasty Chicken Salad with the warm notes of curry. Curry Chicken Salad is creamy, spicy, fruity and crunchy. What more could you ask for?
- 2 Cups diced chicken
- 2 celery stalks – diced
- 20 small grapes – halved
- 4 TBS mayonaise
- 1 1/2 teaspoons Madras curry powder
- 1 teaspoon Major Grays mango chutney
- 1–2 teaspoons dry roasted salted sunflowers seeds
- 2 croissants (optional)
- Mix together mayonnaise, curry powder, chutney until it’s thoroughly mixed.
- Add chicken, celery, grapes and sunflower seeds.
- Serve on a bed of arugula or between any type of bread or roll.
