My Mom made these each year during the holiday season or for a special treat. They are a family favorite with fond memories.
The only change I’ve made over the years is the parsley garnish for a pop of bright color and freshness.

Ingredients
- 1 lbs. small shrimp
- Salt and pepper to taste
- 1 tube refrigerator biscuits
- 4 oz. Gruyere cheese
- 1 tbsp diced scallions
- ½ cup mayonnaise
- ¼ teaspoon yellow curry powder
- Chopped fresh parsley for garnish.
Let’s Make Shrimp Toast Appetizer
- Preheat oven to 375°.
- Clean and devein the shrimp. Remove the tails.
- Place shrimp onto a parchment paper lined baking sheet and top with salt and pepper.
- Bake for 10 minutes.
- Allow the shrimp to cool on the baking sheet at room temperature.
- Increase oven temperature to 400°.
- Once the shrimp have cooled, dice them into small pieces and place them in a medium-sized mixing bowl.
- Shred the cheese.
- Add the cheese, mayonnaise, and curry powder.
- Fold the mixture with a rubber spatula until combined.
- Open the tube of biscuits. Slice each biscuit into quarters and roll each quarter into a small ball.
- Place the biscuit balls on a baking sheet covered with parchment paper or a baking mat and gently flatten each ball.
- Spoon 1 tbsp of the shrimp mixture onto each flatted biscuit.
- Bake at 400° for 9-11 minutes, until bubbly and golden brown.
- Serve hot or at room temperature.

- Make ahead – The shrimp mixture can be made and refrigerated a day ahead. Remove it from the refrigerator for 5 minutes before assembling and baking.
- Shrimp – Frozen thawed or canned shrimp can also be used for this recipe.
