Curried Cauliflower Rice has an earthy, spicy, warm flavor with bright bites of yellow raisins. It’s a great substitute for white rice.
I love all Indian spiced foods! So it’s not surprising that I use traditional curry powder in many of my dishes. It’s a way to get full flavor, especially when you don’t have a lot of time to spend in the kitchen. Did you know that the term “curry” is similar to the word “stew”? Curries refer to dishes that are cooked with meat or vegetables, or both, in an Indian spiced sauce. For this dish, I used “curry powder”. The major flavors in curry powder are turmeric, cumin, and ginger – all called warm spices. Personally, I prefer Madras Curry Powder which has a much spicier taste that comes from chili peppers.
My favorite way to serve Curried Cauliflower Rice is with grilled pork and Cilantro Lime Sauce.
Curried Cauliflower Rice

Ingredients
- 1 10-ounce bag of frozen cauliflower rice – thawed
- 1/4 cup onion – diced small
- 1/2–1/3 chicken stock (you can also use vegetable stock)
- 2 TBS extra virgin olive oil
- 1 TBS curry powder
- 1 teaspoon turmeric
- 2 TBS yellow raisins
- Pinch of black pepper
- Cilantro to garnish (optional)
- Sliced almonds to garnish (optional)
Instructions
- In a stove-top frying pan, add olive oil, onion, turmeric, and curry powder…cook for 3 minutes on medium heat.
- Add cauliflower, chicken stock, black pepper, and raisins.
- Bring the mixture to a boil and reduce it to a simmer.
- Cook for 5-6 minutes.
- Garnish with cilantro and almonds (optional)
