Classic Wedge Salad with Blue Cheese Dressing

Classic Wedge Salad with Blue Cheese Dressing is a classic steakhouse recipe. An ice-cold wedge of iceberg lettuce topped with creamy homemade blue cheese dressing.

If you like your lettuce cold and crispy and covered with a creamy blue cheese dressing and topped with crispy bacon, juicy tomatoes, and hard-boiled eggs, you’ve come to the right place…behold the Classic Wedge Salad with Blue Cheese Dressing.

What is a Wedge Salad?

If you’ve ever been to a traditional steak house then you probably already know about wedge salads because it’s a pretty standard salad on most menus.  It is literally a wedge of iceberg lettuce topped with tomatoes and bacon. I added the eggs for an additional layer of flavor.

How do I eat a Wedge Salad?

This is a good question because you now have a large wedge of salad on your plate and you’re ready to dig in. I’m not sure there is any perfect way to eat the wedge but I find two different ways work best for me.

  1. The first method is to chop up the entire salad – now you have a “chopped” salad that is now in nice easy pieces to eat.
  2. The second way is to slice the amount you are going to bite from the front or back of the wedge. Of course, this is probably the more polite way to dig into this wedge.

Krazy Kitchen Mom Tips:

  1. This is a perfect salad for a crowd and it’s a real show stopper. You can prep the wedges in advance and keep them refrigerated in a zip-top bag. Make the dressing in advance as well as slice the toppings. All you need to do on “party” day is to pull everything out and assemble it.
  2. To wash the wedges, cut them first, run some water carefully through the lettuce leaves on each wedge and dry the laying on their sides on a clean kitchen towel.
  3. I use a mild blue cheese in my blue cheese salad dressing so usually select a Danish Blue Cheese.

Description

Classic Wedge Salad with Blue Cheese Dressing is a classic steakhouse recipe. An ice-cold wedge of iceberg lettuce topped with creamy homemade blue cheese dressing. 


Ingredients

Scale

For the Blue Cheese Salad Dressing:

  • 1/2 cup mayonnaise (I use Hellman’s brand reduced fat)
  • 1/2 cup sour cream (I use a low-fat sour cream)
  • 4 ounces of mild blue cheese (Danish blue cheese)
  • 1 teaspoon Worcestershire Sauce
  • 1/2 teaspoon dry mustard
  • Salt and black pepper

For the Wedge Salad:

  • 1 head of iceberg lettuce
  • 4 strips of bacon – cooked crisp
  • 2 hard-boiled eggs – chopped
  • 1 medium-sized tomato – diced

Instructions

For the Blue Cheese Salad Dressing:

  1. Add mayonnaise, sour cream, Worchestershire Sauce, dry mustard, and salt and pepper to a bowl and stir until it is completely mixed together.
  2. Cut the blue cheese into very small pieces and add them to the dressing mixture using a fork to stir.
  3. Chill for 1-2 hours before dressing the salad.

Assemble the salad:

  1. Cut the lettuce into quarters and arrange them on a serving platter.
  2. Add 2 TBS blue cheese dressing to the top of each lettuce quarter.
  3. Evenly distribute the bacon, tomato, and eggs over the wedges.
  4. Salt and pepper if you’d like.

The salad dressing yields 1 cup.
