Shawarma is traditionally cooked on a large spit and slow roasted. But you can easily make this at home on your indoor grill top or grill pan. It’s best served rolled in a traditional pita topped with fresh tomatoes, onions and Tatziki Sauce.
8 -10 thin skinless chicken breasts – sliced into strips
2 TBS cumin
2 TBS smoked paprika
1 teaspoon red pepper flakes
3 TBS extra virgin olive oil
Salt and pepper
Juice from 1 lemon
2 garlic cloves – smashed
8 – 10 large pita breads (I buy these from my neighborhood Greek restaurant because I can’t find the same quality at the grocery store.)
1 large beef steak tomato – diced
1 medium onion – sliced (we don’t care for raw onion so we leave this out)
2 cups shredded lettuce
Fresh diced parsley for garnish

In large zip top bag, add first 8 ingredients and marinate for 4 hours.
Grill strips of chicken on grill top just until cooked; remove and set aside. Once all chicken strips are cooked, add a some olive oil to the grill top and cook chicken a second time – this time you are looking for it to caramelize so that it’s brown but still juicy.
When chicken is grilled, you are ready to build the sandwich.
Place chicken in warmed pita (warm they in the microwave for 20-30 seconds), top with tomatoes, lettuce, onions and Tatziki Sauce. Enjoy!
