Feel good about eating meatloaf – this is made with ground chicken breast, chopped vegetables and red quinoa.
1 lb. Ground chicken breast
1/2 cup cooked red (or white) quinoa
1/3 cup each of diced onion, carrots, red and yellow pepper, celery
1/4 Panko bread crumbs
1/3 cup prepared taco sauce or red enchilada sauce
1/3 shredded cheddar cheese
1 teaspoon each: cumin, chili powder, garlic powder, red chili flakes
Salt and pepper to taste
Preheat oven to 350 degrees.
Beat egg and mix with quinoa and taco sauce.
Add remaining ingredients – be careful not to over-mix or the meatloaf will be chewy.
Form into mini loaves, mini meatballs or even make one large loaf.
Bake for 30 minutes.
I serve this with rice and beans. Ole!
