They actually sell this salad at our local grocery store but I decided to make my own. It’s very easy, satisfying and is great for individually packed lunches or for a big crowd at a cookout or pool party.
Lettuce of your choice – I use either mixed greens or romaine
1/4 small package of plain, high quality goat cheese
1/2 cup diced chicken – you can use left over grilled chicken or use a rotisserie chicken from the grocery store.
1/4 diced strawberries
2 tablespoons salted peanuts
Toss all ingredients with poppy-seed dressing except goat cheese and peanuts in large bowl.
Transfer to serving dishes and top with small pieces of goat cheese and salted peanuts
POPPY SEED DRESSING
3/4 cup mayonnaise or salad dressing like Miracle Whip
1/3 cup sugar
2 tablespoons cider vinegar – I use Bragg’s Organic
2 teaspoons poppy-seed
Mix all dressing ingredients and chill in a mason jar
