How could you even resist something so beautiful – oh and it’s good for you too!
1 cup coconut milk – I buy the type in a carton in the refrigerator section of the grocery store.
1 cup plain Greek yogurt
1 TBS good vanilla extract
1/4 cup black chia seeds
1 teaspoon of honey (you can add more if you like things sweeter)
12 Strawberries – blended smooth in the blender
Diced and sliced fruit – kiwi, strawberries, banana, mango
Toasted slivered almonds – (I keep these on hand all the time – see Toasted Toppings
Toasted coconut for garnish see Toasted Toppings
Whisk together the milk, yogurt, vanilla, blended strawberries, chia seeds and honey, cover and refrigerate overnight or up to 8 hours.
Place a few spoons full of the Chia pudding mixture on a plate and arrange fruit. Enjoy!
