It’s official and I am saying it out loud – I have an addiction – a Chia Seed addiction! I’ve been seeing a lot of pictures of chia seed cups and bowls on social media. They are so pretty that I really wanted to make something that looked almost too good to eat. I was also very curious about the taste.
Before I could make this new favorite treat I had to figure out where to buy Chia so I resorted to my always g0-to source and I “googled” it. The pictures I’ve seen seem to use black chia and white chia so I found an organic version of both and ordered them on line. While I was waiting I read a lot of different recipes and since they were all very similar I decided I could use any mixture of ingredients as long as I got the ration of chia seed to liquid correct.
I read enough that I learned I had to make the chia pudding mixture a day in advance. I mixed the base ingredients and as any good cook, I dipped a spoon in for a taste. WOW – it was delicious – without even sitting in the refrigerator overnight. With much restraint not to drink the mixture I placed it in a bowl, covered it and let it set overnight.
The next morning I could hardly wait to run to the refrigerator and see how my new concoction was doing. To my surprise the chia seeds had expanded and absorbed the liquid and I had a yogurt or light pudding type mixture. Again I grabbed a spoon and this time it was WOW WOW WOW!
If you want a big WOW, you need to make this pretty, delicious and healthy parfait for breakfast, a snack or even a meal.
