Any time of year, Cheesy Potluck Baked Ziti will feed a crowd. It’s an easy make-ahead meal that will be ready when they are.
I call this Cheesy Potluck Baked Ziti because it’s cheesy (yea!) and the recipe is large enough to feed a crowd. My son and his wife, my daughter, and my other son were all coming over on a Sunday afternoon. The girls and I had a full afternoon planned to decorate Christmas cookies and the guys were going to take in whatever Sunday afternoon sports show they could find. The night before I decided I would make a baked ziti and some herb bread to pop in the oven whenever the Sunday crew got hungry.
As it turns out, good thing I made my large batch of ziti because our casual cooking decorating turned into several other “guys” coming by to watch a college wrestling tournament on a station that they even had to pay to watch. My Cheesy Potluck Baked Ziti was a big hit; they ate everything in sight, including several of our cookies.
Potluck Baked Ziti

Description
Any time of year, Cheesy Potluck Baked Ziti will feed a crowd. It’s an easy make-ahead meal that will be ready when they are.
Ingredients
- 2 1-lbs. boxes of ziti pasta noodles
- 1 lbs. Italian sausage
- 1 lbs. Ground beef
- 2 cups pasta sauce
- 1 cup ricotta cheese
- 1 cup finely grated parmesan cheese
- 2 eggs
- 3 cups shredded mozzarella cheese
- 1 teaspoon red pepper flakes
- Salt and pepper
Instructions
- Cook ziti according to package timing minus 2 minutes.
- Brown Italian sausage and ground beef (be sure to drain off any excess liquid)
- In a bowl, mix eggs, ricotta, and parmesan.
- Preheat oven to 350°
- Add red pepper flakes to pasta sauce
- Mix together cooked ziti, pasta sauce, browned meats and ricotta mixture.
- Season with salt and pepper.
- Fold in 2 1/2 cups of mozzarella cheese.
- Cover with foil and bake for 30 minutes.
- Remove the foil; add the remaining 1/2 cup mozzarella cheese, bake for another 10-15 minutes.
Notes
For the vegetarian version of this recipe omit the ground beef and sausage.
