Every holiday party needs these cheesy pecan crips. This recipe is a decadent mix between a cracker and shortbread.

Ingredients

  • 1 cup shredded Colby jack cheese
  • 1 cup shredded mild cheddar cheese
  • ½ cup finely grated parmesan cheese
  • ½ cup butter – softened
  • 4 tbsp water
  • 1 cup flour
  • 1 cup old-fashioned oats
  • 2/3 cup chopped dry roasted pecans
  • ¾ teaspoon salt
  • ½ teaspoon black pepper
  • ¼ teaspoon cayenne pepper

Let’s Make Cheesy Pecan Oat Crisps

  1. Using a hand-mixer or stand-mixer, combine cheese, butter, and water.
  2. In a small bowl whisk flour, salt pepper, and cayenne pepper.
  3. Add flour mixture to the combined cheeses ¼ cup at a time. Mix on medium-low speed. Mix until fully combined.
  4. Add oats and pecans and continue to mix.

  1. Divide the combined mix in half.
  2. Roll each half into a log, cover, and refrigerate for 4 hours or overnight.
  3. Preheat oven to 400°.
  4. Remove 1 log and let rest for 10 minutes.
  5. Slice the log into thin slices about 1/8 inch thick.
  6. Place them on a parchment paper or baking mat-covered baking sheet.
  7. Cook for 11-13 minutes, until they start to brown.
  8. Allow them to cool for 5 minutes before transferring to a cooling rack.
  9. Store in an airtight container for up to 4 days.

  • Grate Your Own Cheese: Pre-grated cheese often contains anti-caking agents that can affect the texture and the ability to melt.
  • Chop Pecans Finely: For a consistent texture chop the pecans into small, even pieces or use the pre-chopped store-bought nuts
  • Watch the Cooking time: Cheese can go from perfectly crispy to burnt quickly. Keep an eye on the crisps as they bake until they are golden brown and crispy.
  • Cool Completely: Let the crisps cool on the baking sheet for a few minutes before transferring them to a wire rack to cool.
