Cauliflower Fried Rice is a low carb, healthy alternative to rice. This recipe will change the way you think about low carb substitutes and I promise you won’t even miss the rice or the carbs.
We are getting ready for my son’s wedding. By “getting ready” I mean we’re all trying to take off a few pounds because, of course, we want to look fabulous in all of those wedding photos. Most of the family is doing low carb or the Keto diet plan. And this is perfect for both.
All you need are a few ingredients, about 15 minutes and you have a delicious and healthy main dish or side dish. Here’s a list of the simple ingredients:
- Minced cauliflower – I bought this already minced from my local store. You can also mice your own in a food processor.
- 2 eggs
- Frozen peas
- Chopped carrots – I cheated again and bought them already sliced
- Soy sauce
- Coconut oil
So if you love fried rice, but are also focused on reducing the carbs, try this recipe. You might not even want to tell your family that it’s not actually rice – wonder how long it will take them to catch on?

Cauliflower Fried Rice
Description

Ingredients
- 1 Head of minced cauliflower
- 1/2 bag frozen peas
- 2 eggs
- 1 cup shredded carrots
- 4 TBS low sodium soy sauce
- 2 TBS coconut oil
Instructions
- Heat 1 TBS of coconut oil in a skillet.
- Beat two eggs and add them to the skillet.
- Scramble the eggs, then remove from pan and set aside.
- Add the rest of the coconut oil and heat on medium.
- Add cauliflower, peas, and carrots.
- Cook for 3 minutes.
- Add soy sauce.
- Cover and cook for 5-7 minutes, stirring a few times.
- Add eggs and cook for another 2-3 minutes, covered.
