This goes way beyond just a tomato brochette because it also has roasted garlic. And if you have never had roast garlic, you are really missing out.
INGREDIENTS for basic Brochette
1 Baguette – sliced
2 dozen heirloom cherry tomatoes cut into quarters
6-8 leaves of basil – chiffonade cut
1 TBS extra virgin olive oil
1/2 teaspoon balsamic vinegar
Salt and pepper to taste
DIRECTIONS for basic Brochette
Mix all ingredients except baguette in a small bowl and chill
Slice baguette, brush with a small amount of extra virgin olive oil and grill on both sides. Set aside when finished.
INGREDIENTS for Roasted Garlic
6 large cloves of garlic
Extra virgin olive oil
DIRECTION for Roasted Garlic
Preheat oven to 400 degrees
Cut about 1/4 of an inch off the top of each garlic glove keeping the clove in tact.
Place each clove in a square piece of foil and drizzle each liberally with olive oil.
Seal each foil packet, place on a cookie sheet and cook for 40 minutes.
Remove from oven and let cool. Squeeze the “garlic paste” from each clove into a small bowl.
TO ASSEMBLE BROCHETTE
Spread a grilled piece of baguette with a small amount of the “garlic paste” and then top with the traditional tomato basil spread.
