This easy hand-held crowd-pleasing appetizer transforms a simple slice of toasted baguette into an irresistible classy party appetizer.

- Brie cheese is a cows milk cheese that is soft and creamy, buttery smooth and goes well with sweet jams and salty nuts and meats.
- Crostini are an easy, but impressive appetizer that can be prepped ahead of time.
Ingredients

- Toasted Baguette – I recommend using a French-Style baguette for crostini toast.
- Brie Cheese – Be sure to buy a decent wheel of brie cheese. I recommend using a double or triple cream brie cheese.
- Apricot Jam – Use your favorite brand of jam or jelly.
- Pistachios – I always have pistachios on hand becasue they add a salty finish to many dishes including salads.
- Hot Honey – You can use any type of honey drizzle you’d like. We prefer a drizzle of homemade hot honey for a little extra flavor kick.
- Fresh Mint – Becasue appetizers need to be dressed for the party.
Let’s Make Brie Apricot Pistachio Crostini
- Slice the baguette.
- Brush one side with olive oil.
- Place them on a parchment paper-covered cookie sheet and toast for 15-20 minutes at 350°.
- Remove crostini and let them cool until they are cool enough to handle.
- Place a slice of brie cheese on top of each crostini and return the cookie sheet to the oven for another 5 minutes to allow the cheese to melt.
- Remove from oven and top each crostini with a teaspoon of apricot jam.
- Crush the pistachios and place a few on top of the jam.
- Drizzle with honey, garnish with fresh mint, plate, and serve.

- There is no need to remove the rind from brie cheese. It is fully edible and it actually serves to hold the cheese together.
- If you cannot find a wheel of brie, use the cream-style spreadable brie and omit the second bake because the cream style is already smooth and creamy.
- Experiment with this recipe and use any type of jam you have on hand. Brie goes especially well with fig jam, orange marmalade, and blueberry jam.
- To make ahead, toast the crostini, allow them to cool completely, and store them in a zip-top bag in the cupboard.

Ingredients
