Breakfast Flatbread with Pepper Jelly is the perfect brunch dish. Bread, eggs, ham, cheese, and greens. All served with a dollop of pepper jelly.
This dish looks like something you would get at a fancy brunch. But would you believe it if I told you it’s super simple and really quick? No prep – simply assemble and let the oven do the rest of the work.
Now if you are fretting a bit about the pepper jelly, you can leave it off. BUT, if you’ve never had pepper jelly with eggs you are truly missing out on one of life’s simple pleasures. I first learned to serve pepper jelly with quiche from a small coffee shop on Hope Island in the Bahamas where my son got married. And since that day, we have peppy jelly any way we cook our eggs.
If you are wondering which type of pepper jelly to use, I like Stonewall Kitchen, Hot Pepper Jelly. Don’t let the name scare you, it’s got just the right amount of heat without making you think you swallowed a blow torch (insert smile).

Description
Breakfast Flatbread with Pepper Jelly is the perfect brunch dish. Bread, eggs, ham, cheese, and greens. All served with a dollop of pepper jelly.
Ingredients
- Two pieces of flatbreads or Nann bread
- 2 eggs
- 1/4 cup diced ham
- 2 ounces feta cheese
- 3–6 teaspoons of pepper jelly (optional)
- Salt and pepper to taste
- Microgreens or arugula for garnish
Instructions
- Preheat oven to 375°
- Place flatbreads on a large cookie sheet.
- Place half of the ham in a circle around the outer edges of each of the flatbreads.
- Carefully all 1 cracked egg to the center of each ham ring
- Bake for 10 minutes.
- Remove from oven and sprinkle with feta cheese
- Place back in the oven for 3-5 minutes.
- Remove from oven; salt and pepper to taste.
- Garnish each flatbread with 2-3 teaspoons of pepper jelly and some microgreens.
