- 2 cups spring mix lettuce
- 2 tbsp extra virgin olive oil
- 2 tbsp red wine vinegar
- 1 teaspoon Dijon mustard
- 1 teaspoon honey
- Salt and pepper
- 2 eggs
- Crispy Pecan Bacon
Crispy Pecan Bacon
- ½ lb. bacon
- ¼ cup chopped pecans
- ¼ cup brown sugar
- 1 tbsp maple syrup
- Pinch of black pepper
Let’s Make a Breakfast Bistro Salad
Crispy Pecan Bacon
- Preheat oven to 375°.
- Line a baking sheet with aluminum foil.
- Lay bacon slices on a baking sheet.
- Mix brown sugar, maple syrup, and pepper in a small bowl.
- Rup equal amounts of brown sugar on each slice of bacon.
- Top each slice of bacon with a small amount of chopped pecans.
- Cook for 25 minutes.
- Allow to cool and chop into large bite-sized pieces.
Salad
- Add a small amount of olive oil to a skillet and fry 2 eggs.
- While eggs are cooking, mix dressing by whisking extra virgin olive oil, vinegar, Dijon mustard, honey, salt, and pepper.
- Toss lettuce with salad dressing.
- Divide lettuce between two plates.
- Top each plate of lettuce with an egg and crispy pecan bacon pieces.

- I recommend cooking bacon in the oven according to this recipe. However, you can also prepare it in a stove-top skillet or the microwave.
- The crispy pecan bacon may seem undercooked for those who prefer extra crispy. But keep in mind bacon continues to cook and crisp after cooling.
