Bourbon Glazed Salmon Cesar Salad has all of the flavors of a traditional Cesar Salad but it’s topped with rich bourbon-glazed salmon.

Anchovies or no anchovies?
Anchovies are a very small saltwater fish that are used in a lot of Scandinavian and Mediterrane cooking. They have a very salty taste. While I do like anchovies in my Cesar salads, I did not use them in this Bourbon Glazed Salmon Cesar Salad mainly because I didn’t want them to overpower the salmon or fight with the flavor of the salmon. But I did use a little bit of Worchestershire sauce in the salad dressing. And you might not know that anchovies are the umami ingredient in Worchestershire sauce.
Homemade Croutons!
Homemade croutons are so easy and so delicious, I seriously don’t know why anyone buys them. I like to use a few slices of either Italian bread or Ciabatta bread. I cut the bread into small squares and toss them into a ziptop bag. I drizzle in a little olive oil and a pinch of salt and pepper. Shake the bag so all of the bread pieces are coated. Place them on a small cookie sheet and put them into a 375° preheated oven. I cooked them for about 15 minutes, watching them closely so they don’t burn. That’s it! That easy and now you never have to buy croutons again.
Krazy Kitchen Mom Tips
Here are a few tips for making this Bourbon Glazed Salmon Cesar Salad:
- When you buy salmon, make sure that you select pieces that are similar in size so that the salmon cooks evenly at the same time. Just ask the fishmonger at your market to give you two or four or however many you are buying that are the same size.

- When you make this salad dressing, make a double batch…it’s that good and you will want to use it on everything. It easily stores in the refrigerator for 3-4 days. By the way, it’s delicious drizzled on hardboiled eggs for breakfast.

Bourbon Glazed Salmon Cesar Salad

Ingredients
Bourbon Glaze:
- 1/4 cup bourbon
- 1/4 cup dark brown sugar
- 2 TBS soy sauce
- 1 teaspoon freshly grated ginger
- A pinch of salt and black pepper
Cesar Salad Dressing
- Zest and juice from 1 large lemon
- 2 TBS Dijon mustard
- 1/3 cup of grated parmesan cheese
- 4 TBS extra virgin olive oil
- 1 teaspoon Worcestershire sauce
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper
Salad
- 2 pieces of salmon, skin removed
- 4 hardboiled eggs sliced in half
- 1 large or 2 small heads of romaine lettuce
- Homemade croutons (see blog post for recipe)
Instructions
Bourbon Glaze:
- Place all ingredients into a small saucepan.
- Bring it to a boil.
- Reduce it to a simmer and cook it for 5-10 minutes.
- When it’s ready, the pan will fill with bubbles, let it cook for another minute stirring it.
- Remove it from the heat and let it cool.
- The sauce will reduce by half and become very thick.
Cesar Salad Dressing
- Place all of the ingredients into a blender and mix well.
- Store in an air-tight jar in the refrigerator for up to 4 days.
Bourbon Glazed Salmon
- Preheat oven to 425°
- Pat the salmon dry with a paper towel.
- Rub a small amount of olive oil on each side of the fish.
- Lightly salt and pepper each side.
- Place the salmon into a small baking dish or on a cookie sheet.
- Bake for 15-20 minutes, until it is opaque.
- Remove dish with salmon from the oven
- Set the oven to broil.
- Brush both sides of the salmon with the bourbon glaze.
- Place the dish back into the oven for 3-5 minutes. Watch it very carefully so it does not burn.
- Remove the salmon from the oven and let it sit for 5 minutes.
- Add more glaze to the top of the salmon.
Assemble the Salad
- Tear the lettuce into small pieces and place it in a bowl.
- Add the desired amount of Cesar salad dressing.
- Add the croutons.
- Arrange the lettuce on a large serving platter.
- Arrange hard-boiled eggs around the salad.
- Lightly salt and pepper if desired.
- Add the salmon to the top of the salad.
Notes
Serve with crusty french bread.
