- 2-3 very ripe bananas
- 1/3 cup melted butter
- 1/2 cup sugar
- 1/4 cup brown sugar
- 1 egg – slightly beaten
- 1 teaspoon vanilla extract

- 1/3 cup fresh blueberries
- 1 tbsp water
- 1-2 cups confectioner’s sugar

Bread
- Preheat the oven to 350°F.
- In a bowl, toss the blueberries with 1 tablespoon of flour and set it aside.
- Beat together butter, sugar, vanilla, and egg until the mixture is well combined, and then set it aside.
- Using a potato masher or fork, mash a banana into a rough pulp.
- Add the mashed banana to the butter, sugar, and egg mixture and mix it well.
- In a separate bowl. add flour, baking soda, and salt and whisk to combine.
- Add the flour mixture to the banana mixture and mix until combined.
- Fold in nuts and blueberries.
- Spray a loaf pan with non-stick cooking spray and pour the mixture into it.
- Bake for 55-65 minutes or until an inserted toothpick comes out clean.
- Allow the bread to cool for an hour before removing it from the pan.
- Once it’s cooled, glaze the top with a blueberry glaze.

- 1. Place the blueberries and water into a small pot and heat it on high heat.
- 2. Wait for it to boil, then reduce the heat to a simmer for 5 minutes.
- 3. Remove the pot from heat and use a potato masher to mash the blueberries.
- 4. Allow the mixture to cool for 5 minutes.
- 5. Strain the blueberry juice into a small bowl and get rid of the blueberry pieces.
- 6. Whisk the blueberry juice and confectioner’s sugar together until smooth.
