A cob salad is more than a salad – it’s an entire meal – all on one plate. This is a great dish to serve for company as everyone and choose what they like. I serve it with Old Fashion Green Goddess Dressing and a warm crusty herb bread.
NOTE: You can change any of these ingredients or portion sizes.
1 bag of mixed greens
3 ears of sweet corn – cooked and removed from the cob (you could also use frozen corn – thawed of course)
3/4 cup mild cheddar cheese – shredded
1 can of black bean – rinsed and drained
4 hard-boiled eggs – sliced
2 avocados – dices
1 large tomato – diced
6 strips of bacon – cooked very crispy and crumbled
1/2 cup of your favorite BBQ sauce
3 chicken breasts – grilled and diced
Toss grilled and diced chicken in your favorite BBQ sauce.
Arrange all ingredients on a large platter – make sure you mix up the colors – remember you eat with your eyes first!
