Start with this Basic Muffin Recipe to make many variations and flavors of muffins. This simple recipe allows you to add many different fruits and flavors to create mouthwatering muffins.

start with the basic muffin recipe
- Flour – I use all-purpose flour for this recipe
- Sugar – Noting special here – just white granulated sugar
- Salt – Salt really does enhance the flavors of baked goods. It also works to tighten the glutens
- Baking Powder – Baking powder lightens the mix and adds texture
- Milk – You can also use half-n-half if you prefer
- Butter – I always use salted butter. It may be against a lot of other cooks but I like the flavor of a little extra salt.
- Eggs
- Vanilla Extract
There you have it…The Basic Muffin Mix. Now it’s time to get creative and add fruit and flavor to the muffins.
BERRY MUFFINS
For berry muffins, fold in fresh sliced berries into the mix. I toss my berries with 1 TBS of flour so they don’t all sink to the bottom when they’re cooking. This way, you’ll get berries distributed throughout the muffins.
- 1-1/2 cup sliced or diced fresh berries of your choice
- 1 TBS flour
lemon poppy seed muffins
With these muffins, you need to do a little substitution with the basic muffin recipe.
- Replace 1/4 cup of milk with 1/4 cup of fresh lemon juice
- Add the zest from one lemon
- Add 2 TBS poppy seeds
Apple Cinnamon Muffins
- 1 cup diced apples without the skin
- 1/2 teaspoon cinnamon
Here are other combinations you can try
ORANGE COCONUT MUFFINS
- Replace 1/4 cup milk with 1/4 cup fresh orange juice
- Add the zest of one orange
- Add 1/2 cup toasted sweetened coconut
rum raisin muffins
- Add 1 TBS rum
- Add 1 cup raisins
Nutella swirl muffins
- Pour the basic muffin mix into the muffin tin
- Top each muffin with 1/2 teaspoon of Nutella
- Use a toothpick to swirl the Nutella into the batter
Caramel swirl Muffins
- Pour the basic muffin mix into the muffin tin
- Top each muffin with 1/2 teaspoon of caramel
- Use a toothpick to swirl the caramel into the batter
pecan muffins
- Add 1 cup toasted chopped pecans

- To ensure that your muffin mix stays fluffy, make sure you do not over mix the batter.
- Whenever you are adding fresh berries (strawberries, blueberries, cranberries, etc.) to a batter, toss them with 1 TBS of flour so they don’t sink to the bottom of the batter while cooking. This way you’ll have berries distributed throughout the baked product.
- You can freeze these baked muffins by placing them in a ziptop bag.

Basic Muffin Recipe With Variations
Ingredients
Basic Muffins
- 2 cups flour
- 1/2 cup sugar
- 1/2 teaspoon salt
- 2 teaspoons baking powder
- 1 cup milk
- 4 TBS melted butter cool it to room temperature before adding to mixture
- 2 eggs
- 1 teaspoon vanilla
Berry Muffins
- 1-1/2 cups fresh copped berries
- 1 TBS flour
Lemon Poppy Seed Muffins
- Replace 1/4 cup of milk with 1/4 cup of fresh lemon juice
- Zest of one lemon
- 2 TBS poppy seeds
Apple Cinnamom Muffins
- 1 cup diced apple without the skin
- 1/2 teaspoon cinnamon
Instructions
Basic Muffins
- Preheat oven to 375°
- Mix the sugar, eggs, milk and vanilla.
- Add the salt, baking powder, and flour.
- Mix until it just comes together - do not over mix.
For Variations
- Add the ingredients above for each of the flavors.
- Bake for 15-20 minutes
Notes
- To ensure that your muffin mix stays fluffy, make sure you do not over mix the batter.
