- Two large sweet potatoes
- 1 TBS olive oil
- Salt and pepper
- Preheat oven to 450°.
- Peel and slice sweet potatoes into even strips.
- Lay the potato slices on a cookie sheet lined with parchment paper.
- Drizzle with olive oil and salt and pepper.
- Bake for 50 minutes; turning them at 25 minutes.
