Say yes to healthy with crispy Baked Sweet Potato Fries. We’ve cut back on fast food so much in the past few years that I can’t even remember the last time I went through a drive-thru. We started cutting back to focus on more healthy eating and it’s really become the one big constants in our routine.
These are very easy to make and you will be amazed at how good they taste. I am a bit obsessed with order – OK you might even call it OCD. Everything in it’s place and a place for everything. That’s evident even when I’m cooking as I have to line the cut potatoes in order on the pan. I just sliced them in pieces, making them as even as I could; drizzled them with olive oil and salt and pepper. That’s about as difficult as it gets.
You could make a dipping sauce or dip them in ketchup but we are purist with fries and eat them just the way they are; hot out of the oven.
- Two large sweet potatoes
- 1 TBS olive oil
- Salt and pepper
- Preheat oven to 450°.
- Peel and slice sweet potatoes into even strips.
- Lay the potato slices on a cookie sheet lined with parchment paper.
- Drizzle with olive oil and salt and pepper.
- Bake for 50 minutes; turning them at 25 minutes.
