Salmon can be cooked in many ways but we like it best just like this – simple and full of flavor.
Salmon filets – skin removed
Slices of fresh pineapple – fresh is the key for this one.
1 teaspoon extra virgin olive oil
Salt and Pepper to taste
Preheat oven to 375 degrees.
Pat salmon dry and then rub with olive oil and sprinkle both sides with salt and pepper.
Bake in a pan, on a rack for 20-25 minutes (we like our salmon cooked thoroughly).
While salmon is baking, grill pineapple slices using a stove top grill pan or place them on the BBQ grill.
We serve this over Harvest Grains Blend (from Trader Joe’s) and spoon some of the fresh pineapple juice over the entire plate before serving. Enjoy! It’s good for you!
