Bacon-Wrapped Dates Stuffed with Goat Cheese are smoky, sweet, creamy. They are the perfect appetizer for a fancy party or a casual get together.
My husband, Vince, and I were at a local wine and cheese restaurant and they had these dates on their menu. We ordered a charcuterie platter and a side of bacon-wrapped dates stuffed with goat cheese. They served their dates sliced in half on a platter. They were so good, I knew I had to recreate this recipe. They were very easy to remake. The changes I made were that I made these with honey-flavored goat cheese and I drizzled them in honey when I served them. I also served them whole so they can be eaten as an easy finger appetizer or can be cut in half for a more formal appetizer.

- Cut dates in half lengthwise. If you bought dates with pits, remove the pits and throw the pits away.
- Stuff the dates with goat cheese.
- Wrap dates with a piece of bacon.
- Cook dates on a foil-covered cookie sheet or baking sheet.

- My first tip is for cooking bacon and I use this method even when I am cooking bacon by itself. Before spreading foil onto the cookie sheet, scrunch it into a ball. Next, spread it out on the cookie sheet. This trick is like magic and I promise your bacon will come out crispy without having to flip it over during cooking.
- Staying on foil, I’ve often been asked which side of the foil is the best side to place the food on. The truth is that there is no difference. The sides look different due to the way that foil is manufactured. But there is no difference in cooking outcomes using either side of the foil.
- One of the biggest time-savers for this recipe is to buy pitted dates. And the bonus is that if they are pitted they are already cut in half too. A real time saver.
Medjool dates
I actually never paid attention to the dates of dates when I’ve bought them until this recipe. I also did a little reading to learn more about Medjool Dates. What I learned is that they come from a palm tree called a Date Palm. These dates have a caramel flavor and they are sweet and a bit chewy. I am totally in love with Medjool dates, especially now that I know they have a real name. (Insert Wink)

Description
Bacon-Wrapped Dates Stuffed with Goat Cheese are smoky, sweet, creamy. They are the perfect appetizer for a fancy party or a casual get together.
Ingredients
- 12–14 Madjool dates (pitted and cut in half)
- 1 4-ounce package of goat cheese ( I use the honey-flavored goat cheese)
- 6–7 slices of bacon
- 1–2 TBS honey
- Fresh parsley for garnish
Instructions
- Preheat oven to 350°
- If the dates still have the pits, cut them in half and remove the pits. Discarge the pits.
- Once dates are cut in half, place about 1-2 teaspoons of goat cheese in the center of each dates.
- Cut the bacon pieces in half and wrap one half piece of bacon around the stuffed date.
- Place the date, seam-side down on a foil-lined cookie sheet.
- Bake for 35-37 minutes.
- Remove from oven, place on a serving platter and drizzle with honey and garnish with fresh parsley.

These can be served hot or at room temperature.
