When my husband tasted this for the first time, he literally said, “I would pay for this in a restaurant”. Wow – that’s the best food compliment! We make this for brunch but agreed that it would be also be a quick dinner on busy nights. The toast is crunchy, while the avocado is smooth and the egg yolk make a delicious sauce, pulling it all together. We love sprouts but if you’re not a fan, just leave them off.
Serving: 2 slices
2 slices of whole grain bread
2 thin slices of deli ham
Extra virgin olive oil
Juice from 1/2 lime
1/2 teaspoon pepper flakes
Salt and pepper to taste
Mash avocado in a small dish, add the lime juice, red pepper flakes, a drizzle of olive oil and salt and pepper. Set aside.
Brush both sides of the bread lightly with olive oil and toast on stove top until the bread is crispy. Set aside.
Grill both sides of the ham slices on stove top until water is cooked off. Set aside.
Start building the sandwich by adding a slice of ham to each piece of bread, then spoon the avocado mixture on top of the ham and top with sprouts.
Actually you could stop here if you didn’t want to add the eggs, but what fun is that?
Fry two eggs sunny side up…add to top of sandwich and dig it!
