This is an impressive spin on artichoke dip. Your friends and family will be awestruck when you put this on the table. It’s gooey delicious, fun and a little bit fancy.
1 box of frozen spinach – thawed and drained so that all of the water is out. (I use a small kitchen towel to squeeze the excess water out after the spinach has fully thawed.)
8 oz. cream cheese – softened
1/4 cup sour cream
1 can small artichoke hearts – drained and chopped
3/4 cup parmesan cheese
3/4 cup mozzarella cheese
Red pepper flakes to taste (try 1/4 TBS to start)
1 package of frozen dinner rolls
Place dinner rolls around the edge of a large baking dish or cast iron skillet and set aside to thaw.
Preheat oven to 350 degrees
Mix thawed and drained spinach with cream cheeses, sour cream. artichoke hearts, cheeses and some red pepper flakes.
Please spinach mixture in the middle of the ring of rolls once they have thawed.
Brush the top of the rolls with a bit of olive oil and sprinkle with parmesan cheese.
Bake for 25 minutes.
