Ingredients
Marinade/Dressing
- Juice from 2 lemons
- ½ cup extra virgin olive oil
- 2 cups grated parmesan cheese
- 2 tbsp Dijon mustard
- 2 teaspoon Worcestershire sauce
- 1 garlic clove
- ½ teaspoon salt
- ½ teaspoon black pepper
Skewers and Salad
- 2 chicken breasts
- Romaine lettuce
- 2 hard-boiled eggs
- Croutons
Let’s Make Air Fryer Caesar Chicken Salad
- Mix the marinade ingredients.
- Add cubed chicken to a large bowl and mix with ¼ cup of the marinade. Reserve the rest of the dressing/marinade for cooking and serving.
- Marinate for 2-4 hours.
- Preheat the Air Fryer to 400°.
- Spoon ¼ cup of the dressing/marinade.
- Add 5-6 pieces of chicken to each skewer, ensuring they are touching.
- Place the skewers in a parchment lined (see note in KKM Tips) air fryer.
- Brush one side of the skewers with dressing.
- Cook for 7 minutes.
- Flip skewers and brush with more dressing.
- Cook for another 6 minutes.
- When the skewers are done, remove them from the air fryer.
- Cut up the Romain lettuce and toss with croutons and dressing. Top with sliced hard-boiled eggs and chicken skewers. Brush the top of the chicken skewers with more dressing if desired.

- If using wooden skewers, soak them in a glass of water for 30 minutes to prevent them from burning.
- I recommend using air fryer parchment papers or a non-stick air fryer cooking mat to cook these skewers for a quick and easy cleanup. Note: preheat the air fryer BEFORE adding the parchment paper.
- Depending upon the size of your air fryer, you may need to cook these in batches of 4 skewers at a time.
