Every time I say the words pina colada I hear “that” song in my head. You know the one…If you like Pina Coladas and getting caught in the rain; if you’re not into yoga…I bet your singing it now too.
Truth is I do like pina coladas but I’m not really a fan of getting caught in the rain or doing yoga – two things I can live without. But give me a drink that has only three ingredients like Three Ingredient Frozen Pina Coladas and I am a very happy gal. Especially when they taste and look just like a tropical vacation.
My son and I made this cocktail one lazy hot summer evening and we instantly fell in love with this refreshing tropical drink. It was like being in the islands in our own kitchen. We used three simple ingredients that we already had; pineapple nectar, coconut milk (in a can) and coconut rum. We don’t usually have coconut rum but I think it was left over from a cookout we had recently. I like using nectar, rather than juice, in cocktails because nectar is actually fruit pulp or puree. To me nectar has a deeper richer fruit flavor.

Three Ingredient Frozen Pina Colada is a classic tropical cocktail made with pineapple juice, coconut milk and coconut rum…perfect for a hot summer day.
- 3 cups of ice
- 2 1/2 cups pineapple nectar or juice
- 1/2 cup coconut milk
- 1/2 cup coconut rum
- Fresh pineapple and maraschino cherries for garnish
- Add ice, nectar coconut milk and run to the blender.
- Blend until smooth and creamy.
- Serve with pineapple and cherry garnish.
